Why does 100% plant-based diet is so good for You as an athlete?

Before we started to base our daily meal on 100% fruits and vegetables, we were the regular eaters of animal flesh, either meat or fish. My background is pretty carnivore as some members of my family include the meat in every daily meal.
So it was not easy first to convince ourselves especially as Arthur Schopenhauer once said:

“…All truth passes through three stages.
First, it is ridiculed.
Second, it is violently opposed.
Third, it is accepted as being self-evident….”
